Cauliflower Hummus and Burger

The “it” vege of the moment has to be cauliflower.  I love it and it is so versatile.  You can eat it plain, cut it into “steak” wedges and grill it, roast it as a side dish, pulverize it into “rice,” and puree it into a hummus like I did.

I used one big head of cauliflower and chopped it into florets.  I tossed them in EVOO, salt, and pepper, and roasted them in a 400 degree oven for about 20 minutes.  This gets them soft and a little toasty.  Step 2 is to drop the roasted florets into your food processor.  Mix in fresh lemon juice, a little chopped garlic, olive oil, and salt.  Whizz it up until you get the consistency you want.

Serve with sliced cucumbers, tomatoes, and pita bread.  Or…

use it as a great spread on a Greek burger.  For the burger, I mixed some pork sausage and beef together with some greek spices and feta cheese.  My bun is pita bread.  Yum!
