Week 17: Crab Legs 

Ending the season with a bang! My Bills had another lame season, but I enjoyed this weekly blog post. Happy New Year!

Week 16: Smoky Guacamole

Squish the fish today Buffalo!  My smoky guac is a great spin on the classic…just add some chipotles in adobo and smoked paprika.


Week 15: Roasted Goodness

The Bills cannot lose to the Browns today!  I made a hearty meal of roasted Brussels sprouts, sun-dried tomatoes, and (shelf-stable) gnocchi.  Top with olive oil, lemon juice, salt, and pepper and roast at 425 degrees for 20-30 minutes.  Hit it with parm just before serving.


Week 14: Chili

This is my all-time favorite food to eat while watching my Bills; especially on a cold Sunday!

Week 13: Lasagna

I was thankful for this classic Italian comfort food after watching my Bills blow the game against the Raiders.

Week 12: Buffalo Chicken Wraps

Let’s go Buffalo! Hometown inspired buffalo chicken wraps with crumbly blue cheese and a cold Genny.

Week 11: “Brunchy” Fritatta

Enjoyed this pork and butternut squash fritatta while watching my Bills grind out a tough win over Cincinnati.  Back to 5 and 5 with playoff hopes still alive!


Week 10: Italian Sausage Hoagie

Saute Italian sausage with peppers and onions.  Drop on a Portuguese Roll and smear with basil pesto.  Yum!


Week 9:  Chicken Swiss

Buffalo at Seattle for a Monday night battle led me to a family favorite comfort food.  Chicken breasts are covered with Swiss cheese, gravy, and croutons and baked to golden deliciousness.  Serve over rice and enjoy.


Week 8: Proscuitto Crazy

I wrapped asparagus and garlic bread sticks in proscuitto and roasted them in a 400 degree oven until golden delicious!  Horrible week for my Bills against those pesky Patriots.


Week 7:  Bye Week

Week 6: Rice and Beans with Pulled Pork

Four in a row for Buffalo!  Huge win over the 49ers.  This dish was a perfect marriage of leftovers (pulled pork, rice, and black beans).  I added “Pa’s Pistols” sweet hickory sauce for a nice tang.


Week 5: Cali Salad

Keeping it healthy for the Bills trip to the west coast… fresh greens, blueberries, sliced almonds, dried apples, homemade lemon vinaigrette, all topped with grilled chicken slices.  Three wins in a row as the Bills take the Rams 30-19.


Week 4: BBQ Nachos

I had some awesome left overs – pit smoked pulled chicken and pork.  I topped tortilla chips with the meat, BBQ sauce, and cheese.  Bake at 400 degrees until the cheese melts.  Huge win for the Bills, shutting out the Patriots 16-0!


Week 3:  Salsamole

Here’s a great idea for using avocados that are not quite ripe yet.  Buzz them up in the food processor with some white onion, garlic, salt, lime juice, and cilantro.  Dip it into chips or top your fish tacos with it.  How about them Bills!  Big win over Arizona!!

Week 2: Mozzarella Stick Rollups

Bake some good quality frozen mozzarella sticks (or go all out and make your own from scratch!).  I wrapped a third in proscuitto, kept a third plain, and wrapped the other third in pan-fried eggplant (with a little egg wash).  Serve with red sauce.

Down went my Bills again, this time to the Jets 37 to 31.


Week 1: Chicken Parm Dip with Crostini

Pulled Chicken baked with Tomato Sauce, Ricotta, Parmesan Cheese, Mozzarella Cheese, and Italian Herbs.  Toast up some multi-grain baguette rounds and dip in!

Sadly, my Buffalo Bills played terrible and lost to the Raven 13 to 7.
