One of my favorite from Forest Gump’s list!
Step 1 (this takes the longest): Using large, uncooked, shell-on shrimp… peel the shell off all the way to the tail. Be sure to clean out the vein or buy them already de-veined.
Step 2: Season the shrimp with salt, corriander, and curry powder. Set aside in the fridge.
Step 3: Using a large bowl, mix together Panko breadcrumbs with sweetened coconut flakes to create the coating/breading.
Step 4: In another large bowl, beat 3 or 4 eggs.
Step 5: Drop the shrimp in the eggs and then into the coconut coating.
Step 6: Heat Canola Oil in a large saute pan over medium heat. Saute the breaded shrimp about 2 or 3 minutes per side. Don’t crowd the pan, work in batches.
Step 7: Remove the browned shrimp to a paper towel lined baking sheet. Lightly season with salt and pat off any excess oil. Repeat the steps until all the shrimp are cooked.
