I helped my friend with a Kentucky Derby party for about 75 people. I love watching the Derby every year. It also gave me a good reason to break out the new smoker I got for Christmas!
I picked up four pork shoulders (“butts”) totaling 37 lbs.! I dry rubbed them overnight.
Next was into the smoker at 250 degrees (F) for 5 hours.
Third step – place the butts into foil pans and cover with heavy duty foil. Lower the temp. down to 150 degrees (F) for 8 hours.
Remove the pans and let them cool for about an hour. Peel off the fat cap and drain the grease. Then the delicious meat will just fall apart!
Serve on a soft roll with BBQ sauce and slaw if you like.
