Ragu

No, not the brand name sauce, but a traditional meat sauce that is satisfying to all.

Directions:

Chop celery, carrot, and onion.  Saute in EVOO and season with salt.

Add ground beef and minced garlic.  Add a little cooked bacon or proscuitto for a real treat!

Make sure the beef is browned, then add your tomato sauce.  Add some red wine vinegar and chicken stock to thin.  Simmer on low.

Make some pasta, mix it with the sauce, and top with Parmesan cheese.
