Fat Tuesday Cake

Got this idea from “The Chew” and had to try it.  It’s a really easy and delicious dessert taking the New Orleans’ classic, bananas foster, and dumping it right into a cake batter and baking it.

Step 1:  Make a vanilla cake batter (buy a mix or make one from scratch).  Preheat your oven to 350.  Place the cake batter in the baking dish you want to use.

Step 2:  Saute 1/2 stick of butter with 1/2 cup of brown sugar (and a pinch of salt).  Add chopped bananas (and plantains if you have them).  Add a splash of rum or bourbon (it may flame up on you, so be careful).


Step 3:  Dump the bananas foster right into the cake batter and pop into the oven.  Heat for 30 to 40 minutes until a toothpick comes out clean.


Step 4:  Serve the warm cake with a big scoop of vanilla ice cream.  A drizzle of caramel sauce and a sprig of mint leaf would be the perfect garnish!
