Something Fishy

Fish is a healthy and fulfilling meal.  Here are two dishes I recently made:

  1. Salmon over lemony greens
  2. Cod over coconut rice, topped with mango and orange bell peppers

I love to prepare fish in a very simple manner.  Place it on a parchment-lined baking sheet, salt it, top it with butter, lemon slices, and dill.  Bake at 350 for about 10 minutes or until done to your desired temperature.

Coconut rice is awesome… just substitute coconut milk for half of the liquid that the rice is steamed in.  Chop up a few scallions for the last few minutes of cooking.
