This is one of those, “What do I have lying around?” meals that turned into a winner.
I made grilled chicken with a fresh mint / oregano pesto the night before.
I had some salad greens, so I put the cold chicken on top and dressed with a lemon vinaigrette.
For one side dish, I toasted up some pitas with a little olive oil and zatar (North African spice blend).
I made a garlic scape / cannelini bean “hummus” with garlic, lemon juice, salt, parmesan, and olive oil.
Finally, I diced up watermelon and topped it with fresh mint and honey.
Healthy, quick, and delicious!
