Grilled Fruit Pizza


I had some nice, ripe peaches and pears.  I love tossing them in EVOO, champagne vinegar, salt, and pepper and then onto the grill.  I diced the grilled fruits up, spread the vinaigrette that the fruits were in onto a pizza shell, then added fresh mozzarella slices, proscuitto, basil, and shaved parmesan.

Drop into a pre-heated 425 degree oven, then top with fresh arugula, more shaved parmesan, and spritz with EVOO and a little lemon juice.  Mmmm!


I call this my “green pie.”

Now, my kids don’t always go for this type of pie, so I made a traditional “red pie” with red sauce, mozz., and pepperoni.


Everyone is happy and there is plenty to go around!
