Greek Chicken Pita

Fire up the grill on a warm spring day for this one!

Marinate chicken breasts or thighs in EVOO, salt, pepper, fresh parsley, mint, and oregano, lemon juice and zest.  Save some of the marinade separately (before putting the chicken in it) so you can use it to drizzle over the finished product.

Chop up fresh cucumbers and tomatoes.  Serve on the side with hummus.

Make a tzatziki sauce:  plain Greek yogurt, diced cucumbers, clove of minced garlic, lemon juice, diced fresh mint, and salt.

Grill the chicken along with some sliced green peppers and onions.

Build a monster pita.
