The last meal of this Thanksgiving season is always one of my favorites! I use up the turkey carcass and all the leftover turkey.
Make homemade turkey stock by covering the carcass, carrot, celery, onion, fresh herbs and seasonings with water. Bring to a boil and reduce to a simmer for about an hour. Strain the stock and reserve for the soup. Pull all the meat off the carcass and add it to any leftover turkey you still have in the fridge.
To make the soup, dice up 2 yams, 1 white potato, celery, carrot, and onion. Heat in a large stock pot (season with salt and pepper) for about 7 minutes. Then, add the turkey, stock, and more seasonings or herbs to taste. Simmer for 30 minutes, then serve with crusty bread.
