Salmon and Risotto with Beurre Blanc

Great meal here.  Very satisfying.


The salmon is oven roasted with butter, lemon, and dill in a 350 degree oven for about 10 minutes.

The risotto was made with Arborio rice, shallot, and speck.  This takes 30-40 minutes, so start this first.

The beurre blanc (white butter) sauce was made with shallots, lemon juice, and white wine, with cold pats of butter whisked in off the heat and some half grapes added right at the end.
