I was thinking about bacon and eggs and a burger and fries. So I put it together as a cheeseburger topped with porchetta and a sunny-side-up fried egg. The perfect side dish for this is home fries.
Ingredients (serves 4):
1 lb. Ground Beef (85/15 or 90/10) – form into four burger patties
4 Porchetta Slices (pork loin wrapped in pancetta – should be able to find this at the deli)
4 slices Sharp Cheddar Cheese
5 medium Potatoes
Salt, Pepper, EVOO, granulated garlic, dried smoked paprika
Use a fork to poke holes in the potatoes. Put them on a piece of parchment paper and heat in the microwave for 8 minutes on high.
Dice your onion and set aside. Rough chop your parsley and set aside.
Heat up your grill and liberally season your burgers with salt, pepper, and granulated garlic.
Remove potatoes from microwave and cut into large dice for home fries.
Heat up some EVOO in a skillet, add the potatoes and season with salt, pepper, granulated garlic, smoked paprika (and any other spices you like)
Drop the burgers on the grill to desired doneness. Top with cheese to melt.
Finish cooking the home fries, top with fresh parsley and set aside.
Pan fry the porchetta slices and put them on top of the burgers.
Pan fry the eggs to sunny-side-up and put one egg on each burger.
Serve the burgers with a side of home fries.
