Turkey Burger stuffed with Turkey Bacon, Spinach, and Feta
Using the Stufz device (http://www.buystufz.com/)
Preheat oven to 375
Saute three turkey bacon strips in a little EVOO in a large oven-safe skillet. Set aside on paper towels.
Use same skillet with reserved juices and drop in 6 oz. of fresh baby spinach leaves
Season with salt, pepper, and a touch of garlic powder
Drop a handful of Feta cheese in
Crumble the bacon in and set this aside to stuff into your burgers
Get about 2 lbs. of lean ground turkey (I use 94% lean, not 99%)
Season with salt, pepper, ground corriander seeds, and garlic powder
Hand mix the meat and seasonings together (work quickly as you want the meat to stay cold so it releases from the Stufz device better)
Follow the directions on the device to stuff the burgers.
Use the same skillet to cook the burgers in (may need to recondition it a bit). Pan fry the burgers, flipping once. Move the skillet into the oven until the burgers are cooked through (check with thermometer). Serve on a hamburger roll of your choice (I like soft, seeded ones) or go bun-less! Great with a side of fries (or whatever you like).
The Stufz device has a lot of potential! I can definitely get better at using it. I learned that you need more meat than I originally thought in order to build the crevice for the stuffing and to top it off. So many varieties of burgers and fillings to dream up! This one was super tasty and a little bit healthier with spinach and turkey proteins.
