I was given two zucchinis fresh from a friend’s garden. They were perfect, each about a foot and a half long. I cut them into long strips, about a half-inch wide, smeared them with olive oil and salt, and put them on the grill. I let both sides get nicely browned, then let some mozzarella cheese melt on them. I cut them up, finished with a dash more of sea salt, and popped them on a hamburger bun. Voila! It was almost as good as a real burger and certainly a nice, healthy choice.
