1 lb. Lemon Basil Orzo (from Flour City Pasta in Pittsford, NY)
1 cup grape tomatoes, halved
1 cucumber, peeled, seeded, and diced
6 oz. feta cheese
Juice of one lemon
Fresh basil, chiffonade for garnish
Make pasta ahead of time, cover with EVOO, put in fridge to chill.
When ready to serve: add all other ingredients, mix together, and serve.
Add more lemon juice or salt, to taste.
