a.k.a. fish cooked over veges in parchment
Preheat oven to 500.
Season fish with salt, pepper, and lime juice.
Julienne whatever veges you have. I used red bell pepper, vidalia onion, zucchini, and plantain.
Lightly saute the veges and set aside. Don’t fully cook.
Lightly sear both sides of the fish. Don’t fully cook.
Make heart shaped pieces from parchment paper. On one half of the parchment, put a scoop of veges down and top with fish. Flop the other half of the parchment over and seal the edges by folding every two inches to make a packet.
Put the parchment packets on a baking sheet (don’t stack them). Sprinkle a small amount of EVOO on top of each packet. Bake in a 500 degree oven for 7-10 minutes. Serve right from the packet.
